  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/2 cup onion, chopped
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup Smoky Bourbon BBQ sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 slices bacon
  • 2 cup mashed potatoes
  • 2 tablespoon chives, chopped (optional)
  • 2 tablespoon parsley, chopped (optional)

Instructions

1. Preheat your oven to 375°F and grease a 12-cup muffin tin thoroughly.

2. In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, Worcestershire sauce, BBQ sauce, smoked paprika, salt, and pepper. Mix just until everything is evenly incorporated.

3. Divide the meatloaf mixture into the prepared muffin cup, filling them about 3/4 full. Gently press a small dip into the top of each cupcake.

4. Wrap a slice of bacon around each meatloaf cupcake, tucking the ends down along the sides or underneath.

5. Brush the tops of the cupcakes with a little extra BBQ sauce. Bake for 25 to 35 minutes, or until the meatloaf is cooked through and the bacon is crispy and browned.

6. Carefully drain any excess grease from the muffin tin, if needed. Allow the meatloaf cupcakes to rest for 5 minutes.

7. While the cupcakes are resting, warm the mashed potatoes with butter and just enough milk to make them pipeable. Spoon the potatoes into a piping bag and pipe a swirl on top of each meatloaf cupcake.

8. Garnish the meatloaf cupcakes with chopped chives or parsley, and drizzle with additional BBQ sauce if desired. Serve hot.
