Ingredients
4 ciabatta rolls
2 boneless, skinless chicken breasts
1/4 cup chipotle sauce or 2–3 chipotle peppers in adobo sauce
2 tablespoons olive oil
Juice of 1 lime
1 ripe avocado, sliced
4 slices smoked Gouda cheese
1 cup baby arugula
1 large tomato, sliced
1/2 cup mayonnaise
Salt and pepper, to taste
1 teaspoon garlic powder
1 teaspoon smoked paprika
Instructions
1. Marinate chicken in chipotle sauce, olive oil, lime juice, garlic powder, smoked paprika, salt, and pepper for 30 min to 2 hrs.
2. Grill chicken on medium-high heat, 6–8 min per side until internal temp is 165°F. Let rest, then slice.
3. Mix mayonnaise with chipotle sauce and lime juice to make chipotle mayo.
4. Toast ciabatta rolls if desired. Spread chipotle mayo on bottom half.
5. Layer grilled chicken, smoked Gouda, avocado, arugula, and tomato slices.
6. Top with the other half of the roll and press gently.

For vegan, replace chicken with grilled portobello mushrooms and cheese with vegan alternative.
