Ingredients
- 1 pound ground beef
- 1 pound ground chicken
- 1 cup breadcrumbs
- 1 large egg
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 fresh jalapenos, diced
- 1 cup shredded cheddar cheese
- 4 ounce cream cheese, softened
Instructions
1. Preheat your oven to 375°F and lightly grease a loaf pan or line it with parchment paper.
2. In a large bowl, combine the ground beef, ground chicken, breadcrumbs, egg, smoked paprika, garlic powder, salt, and pepper. Mix gently until just combined.
3. Fold in the diced jalapenos, shredded cheddar cheese, and small dollops of cream cheese.
4. Transfer the meatloaf mixture into the prepared loaf pan, shaping it evenly. Bake for 45-50 minutes, or until the internal temperature reaches 160°F.
5. Let it rest for 10 minutes before slicing and serving.
Notes
For a milder version, remove the seeds from the jalapenos.
Feel free to experiment with different cheese varieties or add more vegetables like onions or bell peppers.
For gluten-free options, substitute breadcrumbs with almond flour or crushed pork rinds.
