Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup apple cider
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)
  • 2 tablespoon reserved apple cider (for topping)
  • 1 tablespoon softened butter (for topping)

Instructions

1. Preheat your oven to 350°F (175°C) and grease and flour a 9×5-inch loaf pan.

2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.

3. In a large bowl, beat together the melted butter, granulated sugar, brown sugar, eggs, apple cider, and vanilla extract until smooth.

4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

5. Pour the batter into the prepared loaf pan and bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.

6. While the loaf is baking, prepare the cinnamon sugar topping by mixing together the granulated sugar and ground cinnamon, and combining the reserved apple cider and softened butter.

7. Once the loaf is done, allow it to cool in the pan for 10 minutes. Remove it from the pan and brush the top with the apple cider-butter mixture. Sprinkle the cinnamon sugar topping generously over the top.

8. Slice and serve warm.

Notes

Use a high-quality apple cider for best flavor.

Don’t overmix the batter to avoid a dense loaf.

Consider adding chopped apples or nuts for extra texture.
