Description

Spicy Mexican Corn Bites are the perfect blend of savory, cheesy, and spicy flavors. These crispy bites are made from a corn and flour batter, fried to golden perfection, and garnished with lime juice and cotija cheese.   • 1/4 cup all-purpose flour

  • 1/4 cup cornmeal

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon chili powder (adjust to taste)

  • 1/2 teaspoon ground cumin

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon smoked paprika

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 large eggs

  • 1/4 cup milk

  • 2 tablespoons finely chopped fresh cilantro

  • 1/4 cup grated cotija cheese (or Parmesan cheese as a substitute)

  • 2 tablespoons vegetable oil (for frying)

  • 1 tablespoon fresh lime juice (for garnish)

  • Additional chili powder and cotija cheese for garnish (optional)


Instructions

  • Prepare the Batter: In a large bowl, combine the frozen or cooked corn, flour, cornmeal, baking powder, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.

  • Add Wet Ingredients: In a separate bowl, whisk together the eggs, milk, and cilantro. Pour into the dry ingredients and stir until well combined. Gently fold in cotija cheese.

  • Fry the Bites: Heat the vegetable oil in a large skillet over medium heat. Scoop spoonfuls of the corn mixture and drop them into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown.

  • Drain & Garnish: Remove the bites from the skillet and drain on paper towels. Garnish with fresh lime juice, a sprinkle of chili powder, and extra cotija cheese if desired. Serve hot and enjoy!

Notes

  • For a spicier kick, increase the chili powder or add some finely chopped jalapeños to the batter.

  • To make this recipe gluten-free, swap the all-purpose flour with a gluten-free flour blend.

  • These bites can also be baked at 400°F for about 20 minutes if you prefer a healthier version.
