Instructions

Prepare the Batter: In a large bowl, combine the frozen or cooked corn, flour, cornmeal, baking powder, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.

Add Wet Ingredients: In a separate bowl, whisk together the eggs, milk, and cilantro. Pour into the dry ingredients and stir until well combined. Gently fold in cotija cheese.

Fry the Bites: Heat the vegetable oil in a large skillet over medium heat. Scoop spoonfuls of the corn mixture and drop them into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown.

Drain & Garnish: Remove the bites from the skillet and drain on paper towels. Garnish with fresh lime juice, a sprinkle of chili powder, and extra cotija cheese if desired. Serve hot and enjoy!
