A unique twist on traditional sushi featuring marinated shrimp, sushi rice, avocado, and spicy mayo.
Ingredients
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon rice vinegar
2 teaspoons sugar
1 tablespoon sesame oil
2 tablespoons sriracha sauce
½ cup mayonnaise
1 cup sushi rice
1 ½ cups water
1 tablespoon rice vinegar (for rice)
½ teaspoon salt
1 avocado, sliced
1 small cucumber, julienned
1 tablespoon sesame seeds (optional, for garnish)
Fresh cilantro or green onions (optional, for garnish
Instructions
1. Start by rinsing the sushi rice until the water runs clear. Then, combine the rice and water in a pot, bring to a boil, and then simmer covered for 15 minutes. Remove from heat and let sit for 10 minutes. Stir in the rice vinegar and salt, then set aside to cool.
2. In a bowl, mix together the olive oil, soy sauce, rice vinegar, sugar, sesame oil, and sriracha. Add the shrimp and let them marinate for 10-15 minutes.
3. Heat a skillet over medium heat and cook the shrimp until they’re pink and cooked through, about 2-3 minutes per side.
4. Combine the mayonnaise with a teaspoon of sriracha (adjust to your desired spice level).
5. Using a ring mold or small bowl, layer the sushi rice, cooked shrimp, avocado slices, and cucumber. Repeat the layers as desired to create your beautiful Spicy Shrimp Sushi Stacks.
6. Top your stacks with sesame seeds and fresh cilantro or green onions. Drizzle the spicy mayo over the top, and enjoy this incredible fusion of flavors!

Properly rinsing and cooking the sushi rice is crucial for achieving the right texture and flavor.
Don’t overcook the shrimp – they should be just barely cooked through and still tender and juicy.
