Description

A delicious and healthy twist on a classic dish, combining spinach and feta cheese in a quesadilla.

Ingredients

Scale
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 small onion, finely chopped (optional)
  • 1 garlic clove, minced (optional)
  • 1 teaspoon olive oil or butter for sautéing
  • Salt and pepper to taste
  • 1/4 teaspoon dried oregano (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 flour tortillas (8-inch)
  • 1 tablespoon olive oil or butter for cooking

Instructions

1. Start by heating the olive oil or butter in a skillet over medium heat. If you’re using onion and garlic, sauté them until softened. Then, add the fresh spinach and cook until it’s wilted. Season the mixture with salt, pepper, oregano, and red pepper flakes (if using). Remove from heat and let the filling cool slightly.

2. Place a tortilla on a flat surface and spread the spinach mixture evenly over one half. Sprinkle the feta and mozzarella cheeses over the top. Fold the tortilla in half to create a half-moon shape.

3. Heat a skillet over medium heat and add a small amount of olive oil or butter. Cook each quesadilla for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted and gooey.

4. Once the Spinach and Feta Quesadillas are cooked to perfection, cut them into wedges and serve them warm. Pair them with your favorite toppings, such as salsa, sour cream, or guacamole, for a truly satisfying meal.

Notes

This recipe is versatile; consider adding other vegetables like mushrooms or bell peppers or using gluten-free tortillas. You can also add protein such as grilled chicken or ground turkey to make it heartier.
