Ingredients
4 boneless, skinless chicken breasts
2 cups fresh spinach, chopped
1 cup artichoke hearts, chopped (canned or jarred)
8 oz cream cheese, softened
1/2 cup sour cream
1 1/2 cups shredded mozzarella cheese
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
1 tbsp olive oil
Instructions
1. Preheat your oven to 375°F (190°C).
2. Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
3. Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 4-5 minutes on each side until browned.
4. In a bowl, mix cream cheese, sour cream, chopped spinach, artichoke hearts, and half of the shredded mozzarella until smooth.
5. Place the seared chicken in a baking dish and spread the creamy mixture over the top. Sprinkle remaining mozzarella on top.
6. Bake for 25-30 minutes until the chicken is cooked through and cheese is bubbly and golden.
