Ingredients

Instructions
1. Start by microwaving the diced sweet potatoes for 4 to 6 minutes, covered, until they’re just barely tender but not mushy.
2. Heat 1 tablespoon of olive oil in a large skillet over high heat. Season the steak cubes with salt, pepper, smoked paprika, and onion powder. Add the steak in a single layer and sear for 2 to 4 minutes total, until nicely browned. Remove the steak to a plate.
3. Add 1 to 2 more tablespoon of olive oil to the skillet. Add the pre-cooked sweet potatoes and cook for 6 to 8 minutes, stirring occasionally, until they’re browned and tender.
4. Toss the bell peppers (and onion, if using) into the skillet. Cook for 3 to 5 minutes, until the peppers are crisp-tender.
5. Add the minced garlic to the skillet and cook for 30 seconds, just until fragrant. Return the seared steak and any accumulated juices to the skillet. If using, stir in the soy sauce or coconut aminos and toss everything together for 1 to 2 minutes.
