Sticky Chicken Bowls are a flavor-packed weeknight meal featuring tender chicken in a sweet and savory sticky sauce, served over rice with roasted broccoli.
Ingredients
- 2 cup uncooked rice
- 2 small heads broccoli, chopped
- 3 large chicken breasts
- 2 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 1/2 cup soy sauce
- 1/2 cup honey
- 1/4 cup rice vinegar
- 3 cloves garlic, minced
- 2 tablespoon sriracha
- 2 teaspoon sesame oil
- 1 teaspoon ground ginger
- 2 teaspoon arrowroot powder mixed with 2 tablespoon water
- 1/2 cup mayo
- 1 tablespoon sriracha
- 2 tablespoon water
- Sesame seeds for topping
Instructions
1. Cook Rice: Prepare the rice according to package instructions and set it aside.
2. Prep Broccoli: Chop the broccoli into small florets. Steam the broccoli in the microwave or on the stovetop until fork-tender, then set it aside.
3. Season Chicken: Cut the chicken breasts into bite-sized pieces and toss them with the olive oil, salt, pepper, chili powder, smoked paprika, onion powder, and oregano.
4. Cook Chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through.
5. Make Sticky Sauce: While the chicken is cooking, add the soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, and ground ginger to a small saucepan. Bring the mixture to a boil, then add the arrowroot slurry and let it simmer for 4-5 minutes until the sauce thickens significantly.
6. Make Spicy Mayo: In a small bowl, mix together the mayo, sriracha, and water until smooth and pourable.
7. Assemble Bowls: Layer the cooked rice, broccoli, and chicken in bowls. Generously pour the sticky sauce over the chicken. Drizzle the spicy mayo on top and sprinkle with sesame seeds.
8. Serve: Enjoy your Sticky Chicken Bowls immediately while they’re hot and delicious!
Notes
Choose the Right Rice: Opt for a long-grain rice like basmati or jasmine for the fluffiest texture to complement the sticky chicken.
Cook the Chicken Thoroughly: Make sure to cook the chicken until it’s golden brown and cooked through, about 6-8 minutes. This will ensure the perfect texture.
Adjust Spice Levels: If you like things extra spicy, feel free to add more sriracha to the sticky sauce or spicy mayo. Start with the amounts listed and adjust to your preferred heat level.
Experiment with Veggies: While broccoli is a classic pairing, you can switch things up by using other roasted vegetables like cauliflower, carrots, or snap peas.
