Ingredients

  • 8 pieces boneless skinless chicken thighs
  • 1 can (20 ounce) pineapple tidbits, drained (reserve juice)
  • 1/2 cup pineapple juice (from the can)
  • 1/2 cup chicken stock
  • 2 tablespoon soy sauce
  • 2 tablespoon sesame oil
  • 2 tablespoon brown sugar
  • 2 tablespoon cornstarch
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1/2 small yellow onion, peeled and diced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Green onions, thinly sliced (for garnish)

Instructions

1. Preheat your oven to 400°F.

2. In a large bowl, whisk together the drained pineapple tidbits, pineapple juice, chicken stock, soy sauce, sesame oil, brown sugar, cornstarch, and garlic powder until well combined. Set this flavorful sauce aside.

3. Season the chicken thighs generously with salt and pepper on both sides.

4. Heat a large, oven-safe skillet over medium heat and add the olive oil. Once the oil is hot, add the diced onion and chicken thighs. Sear the chicken for 3-4 minutes per side, or until they develop a golden-brown crust.

5. Pour the prepared pineapple sauce over the seared chicken thighs. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened.

6. Remove the skillet from the oven and let the chicken rest for 5 minutes before serving. Garnish with chopped fresh parsley and thinly sliced green onions.

Notes

For a thicker sauce, increase the amount of cornstarch. For a thinner sauce, reduce cornstarch or add more pineapple juice or chicken stock.
