  • 3 chicken breasts (approx. 525 g / 1.1 lbs), cut into bite-sized chunks
  • 2 tbsp cornflour (cornstarch in the US)
  • Salt and pepper, to taste
  • 3 tbsp oil (vegetable or neutral-flavored)
  • 435 g (15 oz) canned chopped pineapple in juice (keep the juice and pineapple separate)
  • 2 tbsp soft brown sugar
  • 3 tbsp dark soy sauce
  • 1 tbsp tomato purée (tomato paste in the US)
  • 1 onion, peeled and cut into wedges
  • 1 red bell pepper, chopped into chunks
  • 2 garlic cloves, minced
  • 1 tsp minced fresh ginger
  • Cooked rice
  • Fresh coriander (cilantro), chopped
  • Sriracha (optional, for heat)

Instructions

1. In a bowl, toss the chicken pieces with cornflour, salt, and pepper until they are evenly coated.

2. Heat the oil in a large skillet or wok over medium-high heat. Add the coated chicken and cook for 5 – 6 minutes, stirring occasionally, until the chicken is golden and nearly cooked through. Transfer the chicken to a plate.

3. In the same pan, add the onion and red bell pepper. Sauté for 2 minutes until they are slightly softened. Then, add the garlic and ginger, and cook for 30 seconds until fragrant.

4. In a small bowl, whisk together the reserved pineapple juice, brown sugar, dark soy sauce, and tomato purée until the mixture is well combined.

5. Return the chicken to the pan along with the pineapple chunks. Pour in the sauce mixture, bring it to a boil, then reduce the heat and simmer for 3 – 4 minutes, stirring occasionally, until the chicken is fully cooked and the sauce becomes glossy and sticky.

6. Spoon the sticky pineapple chicken over cooked rice. Garnish with chopped coriander and a drizzle of Sriracha for extra heat, if desired.
