Description

Strawberry Cheesecake Truffle Balls are a delightful and indulgent no-bake dessert that combines the creamy richness of cheesecake with the refreshing sweetness of fresh strawberries. These bite-sized treats feature a graham cracker crust-inspired base, a luscious cream cheese filling studded with juicy strawberry bits, and a silky white chocolate coating.

Ingredients

Scale
  • 1 1/2 cup graham cracker crumbs
  • 8 ounce cream cheese, softened
  • 1/3 cup powdered sugar
  • 1/3 cup strawberries, finely diced and patted dry
  • 10 ounce white chocolate, melted
  • 1 drop pink or red food coloring (optional)
  • Extra graham cracker crumbs or sprinkles for topping (optional)

Instructions

1. In a bowl, combine the graham cracker crumbs, softened cream cheese, and powdered sugar. Mix until a thick, dough-like consistency forms. Gently fold in the diced and dried strawberries.

2. Refrigerate the filling for 30 to 60 minutes, until the mixture is firm enough to easily roll into balls.

3. Using a small cookie scoop or spoon, portion the chilled filling and roll it into 1-inch balls. Place the rolled truffles on a parchment-lined baking sheet or plate.

4. In a double boiler or microwave-safe bowl, melt the white chocolate until smooth and creamy.

5. One by one, dip the chilled truffle balls into the melted white chocolate, allowing any excess to drip off before placing them back on the parchment-lined surface. Sprinkle with extra graham cracker crumbs or colorful sprinkles if desired. Refrigerate for 20 to 30 minutes to set the chocolate coating.

Notes

Properly stored, these Strawberry Cheesecake Truffle Balls can last up to 1 week in the refrigerator. For longer-term storage, you can freeze the truffles for up to 2 months.
