Description
Indulge in the Irresistible Flavor Explosion of Strawberry Crunch Cookies
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoon vanilla extract
- 3 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup freeze-dried strawberries, crushed
- 1 cup strawberry cake mix
- 1 cup crushed freeze-dried strawberries for topping
- 1 cup crushed graham crackers for topping
- 1/2 cup melted butter for topping
Instructions
1. Preheat your oven to 350°F.
2. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
5. Gradually mix the dry ingredients into the wet ingredients until just combined.
6. Fold in the crushed freeze-dried strawberries and the strawberry cake mix.
7. Scoop rounded dough balls onto a lined baking sheet, spacing them about 2 inches apart.
8. Bake for 10-12 minutes, until the edges are golden and the centers are set. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
9. In a bowl, mix the crushed freeze-dried strawberries, graham crackers, and melted butter to make the crunch topping.
10. Press the crunch topping onto the tops of the cooled cookies.
11. Store the Strawberry Crunch Cookies in an airtight container at room temperature for up to one week.
Notes
Measure the ingredients accurately for the best results.
Make sure all your ingredients are at room temperature, especially the butter and eggs.
Keep a close eye on the cookies during baking, as oven temperatures can vary, and you don’t want to overbake them.
Store the cookies in an airtight container at room temperature to maintain their freshness and texture.
Feel free to experiment with additional mix-ins, such as white chocolate chips, chopped nuts, or a hint of lemon zest, to personalize the flavor.
