Ingredients
- 1 medium butternut squash
- 2 cup fresh spinach
- 1 cup crumbled feta cheese
- 4 ounce bacon
- 1 clove garlic
- 2 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano (optional)
Instructions
1. Preheat your oven to 400°F.
2. Slice the butternut squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper.
3. Place the squash cut-side down on a baking sheet and roast for 40 to 50 minutes until tender.
4. In a skillet, cook the diced bacon over medium heat until crisp, about 5 to 7 minutes. Remove and reserve drippings.
5. In the same skillet, sauté minced garlic and spinach until wilted, about 3 to 4 minutes. Return bacon and stir in feta and oregano.
6. Flip roasted squash halves over, fill with the mixture, and press down gently.
7. Bake for an additional 15 to 20 minutes until heated through.
