These Stuffed Jalapeño Chicken Cheese Rolls are a perfect blend of tender chicken, spicy jalapeños, and creamy cheese, all wrapped in crispy turkey bacon. Ideal for any occasion, they are quick to prepare and sure to be a crowd-pleaser.
Ingredients
1 lb boneless, skinless chicken breasts, pounded thin
4 oz cream cheese, softened
1 cup shredded cheddar cheese
4 jalapeños, seeded and diced
6 strips turkey bacon
Salt and pepper to taste
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and diced jalapeños. Stir until well incorporated.
3. Lay the pounded chicken breasts flat. Spread the cheese and jalapeño filling evenly over each.
4. Roll up each chicken breast, securing with toothpicks if needed.
5. Wrap a strip of turkey bacon around each roll.
6. Place the rolls in a baking dish or on a baking sheet.
7. Bake for 25–30 minutes, or until chicken is cooked through and bacon is crispy.
8. Let rest a few minutes before serving.
Notes
Use a meat thermometer to ensure the chicken reaches 165°F (74°C).
For crispier bacon, broil for 2–3 minutes after baking.
