Ingredients

Instructions
1. In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt until well combined.
2. In a separate bowl, whisk together the coconut cream, egg, melted butter, and vanilla extract until smooth and creamy.
3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. If using shredded coconut, fold it in now.
4. Heat a lightly greased skillet or griddle over medium heat. Pour about 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
5. Stack the pancakes high and serve with your favorite toppings.
