Description

Sweet Potato Green Bean Tray Bake is a quick and healthy side dish that combines sweet potatoes and green beans, providing essential vitamins and minerals.

Ingredients

Scale
  • 2 sweet potatoes, peeled and cut into 1-inch cubes
  • 8 ounce fresh green beans, trimmed and cut in half
  • 23 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 tablespoon brown sugar (optional, for sweetness)
  • 1/2 teaspoon garlic powder or 2 garlic cloves, minced
  • 1/2 teaspoon dried thyme or your favorite herbs

Instructions

1. Preheat your oven to 425°F. Lightly grease a large baking sheet to prevent sticking.

2. Wash, peel, and cube the sweet potatoes into 1-inch pieces. Wash and trim the green beans, then cut them in half.

3. Place the sweet potatoes and green beans on the prepared baking sheet. Drizzle with olive oil and sprinkle with salt, pepper, brown sugar (if using), garlic powder, and dried thyme. Toss everything together until the vegetables are evenly coated.

4. Spread the seasoned vegetables in a single layer on the baking sheet for even roasting.

5. Pop the tray into the preheated oven and bake for 20-25 minutes, stirring once halfway through, until the sweet potatoes are tender and the green beans are slightly crisp and golden-brown.

6. Remove the Sweet Potato Green Bean Tray Bake from the oven and serve it straight from the tray.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, spread the tray bake evenly on a baking sheet and warm it in the oven at 350°F for about 10-15 minutes, or until heated through.
