Ingredients

- 2 tablespoon honey

Instructions
1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
2. In a large bowl, toss the sweet potato rounds with the olive oil, salt, black pepper, and smoked paprika until they’re evenly coated.
3. Arrange the seasoned sweet potato rounds in a single layer on the prepared baking sheet. Roast them for 25-30 minutes, flipping them halfway through, until they’re tender and caramelized around the edges.
4. Once the sweet potato rounds are out of the oven, drizzle the warm rounds with honey and sprinkle with feta cheese. Garnish with fresh thyme leaves.
