Ingredients
- 1 1/2 pound ground beef (or a mix of beef and pork)
 - 1/2 cup panko breadcrumbs
 - 1 large egg, lightly beaten
 - 3 cloves garlic, minced
 - 1 tablespoon fresh ginger, grated
 - 2 tablespoon gochujang (Korean chili paste)
 - 2 tablespoon soy sauce
 - 1 tablespoon sesame oil
 - 1 tablespoon honey
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 3 green onions, finely chopped
 - 1/4 cup gochujang (for glaze)
 - 2 tablespoon ketchup
 - 2 tablespoon brown sugar
 - 1 tablespoon soy sauce (for glaze)
 - 1 tablespoon rice vinegar
 - 1 teaspoon sesame oil (for glaze)
 
Instructions
1. Preheat your oven to 350°F. Grease a loaf pan to prepare for the meatloaf.
2. In a large bowl, combine all the meatloaf ingredients: ground beef (or beef and pork), panko breadcrumbs, egg, garlic, ginger, gochujang, soy sauce, sesame oil, honey, salt, black pepper, and green onions. Mix the ingredients until they are just combined.
3. Transfer the meatloaf mixture to the prepared loaf pan and shape it into a loaf. Bake the meatloaf for 45 minutes.
4. While the meatloaf is baking, prepare the Sweet & Spicy Korean BBQ Glaze by whisking together all the glaze ingredients in a small bowl.
5. After the initial 45 minutes of baking, brush the glaze over the top of the meatloaf. Continue baking for an additional 15–20 minutes, or until the meatloaf is cooked through and the glaze is caramelized.
