Ingredients
- 1 boneless turkey breast (about 3 pound)
- 1 cup breadcrumbs (packed)

- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoon olive oil
- 1/2 cup chicken broth
Instructions
1. Preheat your oven to 375°F.
2. Prepare the turkey breast by making a horizontal cut through the thickest part, then pound it to an even 1/2-inch thickness.
3. In a skillet over medium heat, warm the olive oil and sauté the chopped onion, celery, and carrots for about 5-7 minutes until softened. Add the minced garlic and cook for an additional 30 seconds.
4. Remove from heat and mix in the breadcrumbs, thyme, sage, salt, and pepper. Gradually add the chicken broth until the stuffing holds together.
5. Spread the stuffing evenly over the flattened turkey breast, leaving a 1-inch border. Roll tightly from the long side and secure with kitchen twine every 2 inches.
6. Place seam-side down on a roasting rack in a pan and roast for about 60-75 minutes, or until a thermometer registers 165°F.
7. Let it rest for 10-15 minutes before slicing into 1/2-inch thick pieces.
