Ingredients
- 1 1/2 pound chicken breasts, cubed
- 4 cup broccoli florets
- 1 pint cherry tomatoes
- 2 large eggs, lightly beaten
- 1 cup cottage cheese
- 1/3 cup pesto
- 2 tablespoon olive oil, divided
- 8 ounce shredded mozzarella
- 5 ounce mini fresh mozzarella balls (optional)
- 2 tablespoon grated Parmesan cheese
- Salt and black pepper to taste
- Chili pepper flakes and fresh basil for garnish
Instructions
1. Preheat your oven to 375°F.
2. In a large bowl, whisk the eggs, cottage cheese, and pesto until smooth. Set aside.
3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sauté the broccoli for 3-4 minutes until fork-tender. Season with salt and pepper, then remove and set aside.
4. Heat the remaining 1 tablespoon of olive oil in the same skillet. Season the chicken with salt and cook for 5 minutes, or until golden and cooked through.
5. Add the cooked broccoli, chicken, cherry tomatoes, and shredded mozzarella to the cottage cheese mixture. Gently mix until well coated.
6. Pour the mixture into a 9×13-inch baking dish. If using, dot the top with the mini mozzarella balls. Sprinkle the Parmesan cheese over the top.
7. Place the dish in the preheated oven and bake for 35 minutes, or until the top is golden and bubbling.
