  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 cup softened butter
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled bacon
  • 1/4 cup sliced green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)

Instructions

1. Preheat your oven to 400°F. Scrub the potatoes, poke a few holes in each one with a fork, and rub them all over with olive oil. Sprinkle the potatoes with salt and bake for 55 to 70 minutes, until tender when pierced with a fork.

2. Allow the baked potatoes to cool for 10 minutes, then slice them in half lengthwise. Carefully scoop the potato flesh into a bowl, leaving a thin layer of potato inside the skins.

3. Mash the potato flesh with a fork or potato masher until smooth. To the mashed potato flesh, add the softened butter, sour cream, milk, garlic powder, black pepper, 1 cup of the shredded cheddar cheese, half of the crumbled bacon, and half of the sliced green onions. Stir everything together until creamy and well-combined.

4. Spoon the creamy potato filling back into the potato skins, mounding it slightly on top. Top with the remaining cheddar cheese and bacon.

5. Return the twice-filled potatoes to the oven and bake for an additional 12 to 15 minutes, until the cheese is melted and the tops are lightly golden. Broil for 1 to 2 minutes for an extra-crispy finish.

6. Remove from the oven and top with remaining sliced green onions. Sprinkle paprika over the top if desired. Serve hot.
