Ingredients
- Rotini pasta
- Pepperoni
- Salami
- Mozzarella pearls
- Cherry tomatoes
- Bell peppers
- Black olives
- Red onion
- Pepperoncini peppers
- Extra virgin olive oil
- Red wine vinegar
- Lemon juice
- Parmesan cheese
- Dried herbs (parsley, basil, oregano, garlic powder, paprika)
- Sugar
Instructions
1. Boil the rotini pasta in salted water until al dente, then drain and rinse with cold water.
2. Chop the cherry tomatoes, halve the black olives, dice the bell peppers and red onion, and quarter the pepperoni and salami.
3. Whisk together olive oil, red wine vinegar, lemon juice, Parmesan cheese, sugar, and the dried herbs and spices in a bowl.
4. In a large mixing bowl, combine the cooked pasta, chopped vegetables and meats, and mozzarella pearls.
5. Pour the dressing over the salad and toss to coat evenly.
6. Refrigerate for at least 1 hour before serving, then garnish with Parmesan cheese and chopped parsley.
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days.
For a vegetarian version, omit the meats and add more vegetables or legumes.
For gluten-free, use gluten-free pasta.
