  • 2 medium zucchinis, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup black olives, sliced
  • 1/4 cup Italian dressing
  • 1/4 cup grated Parmesan cheese

Instructions

1. Begin by cooking the rotini pasta according to the package instructions. Drain the pasta and rinse it under cold water to cool it down and stop the cooking process.

2. While the pasta is cooking, prep the rest of the ingredients. Dice the zucchinis, halve the cherry tomatoes, dice the red onion, and slice the black olives.

3. In a large bowl, combine the cooked and cooled pasta, diced zucchini, halved tomatoes, diced onion, and sliced olives.

4. Pour the Italian dressing over the pasta and vegetable mixture and toss gently to coat everything evenly.
