Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 8 ounce cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 8 fresh jalapeños, halved and seeded
  • 12 slices of bacon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

1. Preheat your oven to 375°F.

2. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix thoroughly until well combined.

3. Take the halved and seeded jalapeños and fill each half generously with the cheese mixture.

4. Take one chicken breast at a time. Stuff it with the cheese-filled jalapeño halves, laying them flat inside. Wrap the entire chicken breast tightly with bacon slices.

5. If needed, use toothpicks to help hold the bacon in place.

6. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear each stuffed chicken breast for about 3-4 minutes on each side, or until the bacon is crispy and golden brown.

7. Transfer the seared chicken breasts to a baking dish. Bake for about 20-25 minutes or until the internal temperature of the chicken reaches 165°F.

8. Let the chicken cool slightly before slicing. Serve it warm.

Notes

Choose even-sized chicken breasts for uniform cooking.

Select fresh jalapeños for the best flavor.

Searing the chicken before baking helps achieve crispy bacon.
