Ingredients
- 1 package (about 17.3 ounce) frozen puff pastry, thawed
- 1 cup fresh spinach, chopped
- 1 medium shallot, minced
- 2 cloves garlic, minced
- 4 ounce cream cheese, softened
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon ground nutmeg
- 4 large eggs
- Salt to taste
- Pepper to taste
- Chives, for garnish
Instructions
1. Preheat the oven to 400°F.
2. Roll out the puff pastry and cut it into squares to fit your baking dish.
3. Place the puff pastry squares in the baking dish and bake for 15-20 minutes until golden brown.
4. In a skillet, sauté shallots and garlic until fragrant.
5. Add chopped spinach and cook until wilted.
6. In a bowl, mix cream cheese, heavy cream, Parmesan cheese, nutmeg, salt, and pepper with the sautéed spinach.
7. Spoon the spinach filling into the baked puff pastry shells.
8. Crack an egg into each shell on top of the filling.
9. Return to the oven and bake for 8-12 minutes until the eggs are set to your liking.
10. Garnish with chopped chives before serving.
