Ingredients
- 4 large russet potatoes
- 2 cup shredded rotisserie chicken
- 1 cup BBQ sauce
- 1 cup shredded cheddar cheese
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1/2 cup sliced jalapeños
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Salt to taste
- Pepper to taste
Instructions
1. Preheat your oven to 400°F.
2. Pierce each potato several times with a fork, season lightly with salt, and bake for about 45-60 minutes until tender.
3. Combine the shredded rotisserie chicken with BBQ sauce in a bowl and stir well.
