  • 4 large russet potatoes, thinly sliced
  • 1 medium onion, chopped
  • 2 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoon olive oil
  • 1 cup frozen mixed vegetables (optional)
  • Fresh parsley for garnish

Instructions

1. Preheat your oven to 375°F.

2. In a large skillet, heat 2 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the ground beef along with garlic powder, onion powder, salt, and pepper. Cook until the beef is browned, about 7-10 minutes.

3. In a greased baking dish, lay half of the thinly sliced potatoes at the bottom.

4. Spread half of the cooked ground beef mixture over the potatoes. Sprinkle half of the shredded cheddar cheese on top.

5. Add another layer of the remaining sliced potatoes followed by the remainder of the beef mixture. Finally, sprinkle the last portion of shredded cheese atop the layers. If using frozen mixed vegetables, intersperse them between the layers.

6. Pour 1 cup of beef broth over the assembled layers.

7. Cover the baking dish with aluminum foil and bake for about 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.

8. Let cool for a few minutes and garnish with fresh parsley before serving.
