  • 1 cup uncooked white rice
  • 1 can (15 ounce) diced tomatoes, with juice
  • 1 can (10.5 ounce) cream of mushroom soup
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoon olive oil

Instructions

1. Preheat your oven to 375°F.

2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened—around 3 to 4 minutes. Next, add the ground beef, cooking until it’s nicely browned. Drain the excess fat.

3. In a large mixing bowl, combine the cooked beef mixture with uncooked rice, diced tomatoes (with juice), cream of mushroom soup, beef broth, chili powder, cumin, salt, black pepper, and frozen mixed vegetables. Mix well.

4. Pour the mixture into a greased 9×13 inch casserole dish, spreading it evenly across the bottom.

5. Cover the dish with aluminum foil and bake it for 45 minutes. After that, remove the foil, sprinkle shredded cheddar cheese generously on top, and return it to the oven for an additional 15 minutes, or until the cheese is bubbly and golden.

6. Let the casserole cool for a few minutes before serving.
