  • 2 cup rotini pasta
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, canned, or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced (red, yellow, or green)
  • 1/2 cup red onion, finely chopped
  • 1 avocado, cubed
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoon fresh lime juice
  • 3 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

1. 1. Cook the rotini pasta to al dente perfection in a large pot of salted boiling water for 8-10 minutes. Drain and rinse under cold water.

2. 2. While the pasta is cooking, chop the bell pepper, red onion, and cherry tomatoes into evenly sized pieces. Cube the avocado just before mixing to prevent browning.

3. 3. In a small bowl, whisk together lime juice, olive oil, garlic powder, cumin, and chili powder. Season with salt and pepper to taste.

4. 4. In a large mixing bowl, combine the cooled pasta, black beans, corn, cherry tomatoes, bell pepper, red onion, and fresh cilantro. Pour the dressing over and toss gently.

5. 5. Fold in the cubed avocado ensuring it’s evenly distributed.

6. 6. Cover and refrigerate for at least 30 minutes before serving. Stir gently before serving and garnish with extra cilantro or crumbled feta cheese if desired.

Notes

To store leftovers, transfer to an airtight container and refrigerate. Best consumed within 3 to 5 days. Add a splash of lime juice or olive oil before serving if it appears dry.
