  • 3 tablespoon butter
  • 4 cloves garlic, minced
  • 1/2 medium onion, sliced
  • 7 ounce mushrooms of your choice (shiitake, enoki, or button)
  • 1 tablespoon oyster sauce or soy sauce
  • 23 tablespoon water
  • 1 cup heavy cream or evaporated milk
  • 2 tablespoon miso paste (white or red)
  • Salt and pepper to taste
  • Green onions, chopped for garnish
  • Furikake or shredded nori for garnish (optional)
  • Soft boiled egg for topping (optional)

Instructions

1. To begin, if using frozen udon noodles, soak them in hot water for about 1 minute and use chopsticks to carefully loosen the noodles. Rinse them with cold water, drain, and set aside.

2. Next, melt the butter in a large pan over medium heat. Once the butter is bubbling, add the sliced onion and minced garlic. Sauté for about 2 minutes, or until the garlic turns golden brown and the aromatics become fragrant.

3. Stir in the mushrooms and add 2-3 tablespoon of water and the oyster sauce. Sauté the mushrooms for a few minutes, allowing them to cook through and release their moisture.

4. Now, it’s time to make the creamy miso sauce. Add the heavy cream (or evaporated milk) and miso paste to the pan, and mix well to combine, ensuring the miso paste is fully dissolved. Bring the sauce to a gentle boil.

5. Finally, add the drained udon noodles to the pan and toss them until they are evenly coated in the creamy miso sauce. Season with salt and pepper to taste.

6. Transfer the Creamy Miso Udon to serving bowls and garnish with chopped green onions, furikake, shredded nori, and a soft-boiled egg for a truly indulgent presentation.

Notes

Creamy Miso Udon can be prepared in advance for meal prep! To do this, cook your udon noodles and creamy miso sauce separately. Allow both to cool before storing them in airtight containers in the refrigerator for up to 3 days. When you’re ready to eat, simply reheat the noodles and sauce together in a pan, adding a splash of water if needed to loosen the sauce.
