Ingredients
- 2 large boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoon butter
- 2 tablespoon olive oil
- 2 cup mushrooms, sliced or halved
- 1 clove garlic, minced
- 1/2 onion, finely chopped
- 1 1/2 cup dry white wine
- 1/2 cup heavy cream
- 2/3 cup Asiago cheese, shredded
- 1 teaspoon dried thyme
Instructions
1. Begin by pounding the chicken breasts to an even thickness. Mix the all-purpose flour with the salt and pepper, then dredge the chicken in the seasoned flour.
2. In a large skillet, heat the butter and olive oil over medium heat. Sauté the floured chicken for about 5 minutes per side, or until it develops a golden-brown crust. Remove the chicken from the pan and set it aside.
3. In the same skillet, sauté the sliced mushrooms, garlic, and onion until softened and lightly browned.
4. Pour the white wine into the skillet, scraping up any browned bits. Allow the wine to simmer briefly, then stir in the heavy cream and Asiago cheese. Add the dried thyme.
5. Return the seared chicken to the skillet, allowing it to simmer for an additional 5 to 10 minutes.
