Description

Creamy Orzo with Chicken: A Comforting and Delicious Weeknight Delight

Ingredients

Scale
  • 1 pound chicken breast or chicken thighs, diced
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 2 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup uncooked orzo
  • 2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cup spinach

Instructions

1. Season the Chicken: Toss the diced chicken with paprika, garlic powder, onion powder, salt, and black pepper.

2. Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Cook the chicken until browned and cooked through, then remove and set aside.

3. Sauté the Aromatics: In the same skillet, cook the onion and garlic until softened.

4. Cook the Orzo: Stir in the uncooked orzo, then pour in the chicken broth. Simmer until the orzo is tender and most of the liquid is absorbed.

5. Make It Creamy: Stir in the heavy cream, Parmesan cheese, sun-dried tomatoes, and spinach until creamy and the spinach wilts.

6. Finish: Return the chicken to the skillet and stir until everything is heated through.

7. Serve: Serve the Creamy Orzo with Chicken warm, garnished with additional Parmesan cheese or fresh herbs if desired.

Notes

The key to achieving the best texture and flavor is to cook the orzo until it’s tender but still has a bit of bite, and to stir the ingredients together gently to create a harmonious, creamy sauce that coats every bite.
