Ingredients
- 12 ounce pasta

- 2 cup cherry tomatoes
- 1 can crushed tomatoes

- 1/2 teaspoon red pepper flakes
- Salt and black pepper, to taste
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil, chopped
Instructions
1. Start by bringing a large pot of salted water to a rolling boil. Add the pasta and cook until al dente, according to package instructions. Before draining, save a cup of the pasta water.
2. In a large skillet, heat olive oil over medium heat. Once hot, add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and sauté for about 1-2 more minutes.
3. Toss in the cherry tomatoes and cook, stirring occasionally, until they begin to burst and soften, approximately 5-7 minutes.
4. Pour in the crushed tomatoes along with the Italian seasoning, red pepper flakes, salt, and black pepper. Bring to a simmer and let it cook for about 10 minutes.
5. Reduce the heat to low, and gently mix in the ricotta cheese until it blends with the sauce.
6. Add the drained pasta directly to the skillet, tossing everything together until thoroughly coated in the creamy sauce.
7. Spoon into bowls and sprinkle with grated Parmesan cheese and chopped fresh basil. Serve immediately.
