Ingredients
- 1 pound smoked kielbasa sausage, cut into 1 inch pieces
- 12 slices center-cut bacon, cut in half
- Toothpicks for securing
- 1 1/2 cup dark brown sugar, packed
- 3 tablespoon Dijon mustard
- 3 tablespoon apple cider vinegar
- 1 teaspoon black pepper
- 1 teaspoon chili powder
- 1/4 teaspoon red pepper flakes, optional
Instructions
1. Preheat your oven to 375°F. Line a large baking sheet with aluminum foil and place a wire rack on top. Lightly spray the rack with non-stick cooking spray.
2. In a small saucepan, combine the dark brown sugar, Dijon mustard, apple cider vinegar, black pepper, chili powder, and optional red pepper flakes. Heat over medium heat, stirring regularly until the sugar dissolves and the glaze becomes smooth. Reduce heat to low to keep warm.
3. Take one half slice of bacon and wrap it around each piece of kielbasa. Use a toothpick to secure the bacon in place.
4. Brush each bacon-wrapped kielbasa bite with the warm brown sugar glaze on all sides. Arrange in a single layer on the prepared wire rack.
5. Bake for 40 to 45 minutes, basting every 10 to 15 minutes with extra glaze. They are done when the bacon is caramelized and edges start to char slightly.
6. Remove from the oven and allow to cool on the rack for about 10 minutes. Serve immediately while warm and sticky.
Notes
Select high-quality smoked kielbasa for best flavor. Use center-cut bacon for a leaner option.
Bake on a wire rack for optimum airflow to crisp the bacon evenly.
Consider adding spices like garlic powder or paprika to the glaze for extra flavor.
Store leftovers in an airtight container in the fridge for up to 3 days.
