Description
Crispy High-Protein Bacon Cheeseburger Empanadas are a delightful twist on traditional empanadas, combining the beloved flavors of a cheeseburger with the flaky texture of empanada dough. These savory pastries are not just delicious; they offer a high-protein punch, making them a perfect meal option for those who want to stay full and fueled throughout the day.
Ingredients
- 1 cup ground beef
- 4 slices bacon
- 1 cup shredded cheddar cheese
- 1/2 cup finely chopped onion
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 1 package empanada dough
Instructions
1. Prepare the filling by cooking the bacon in a skillet over medium heat until crispy. Crumble the bacon and reserve drippings if desired.
2. In the same skillet, brown the ground beef, breaking it apart for even cooking. Add the finely chopped onion and minced garlic during the last few minutes.
3. Mix in crumbled bacon, cheddar cheese, Worcestershire sauce, salt, and black pepper until cheese melts and everything is combined. Remove from heat and cool.
4. If making dough, mix flour, butter, salt, and cold water. Keep ingredients cold and avoid overworking the dough. Rest in the fridge for at least 30 minutes.
5. Roll out dough on a floured surface, cut into circles about 4-6 inches in diameter. Spoon beef mixture into the center of each circle, fold over to seal edges.
6. For baking, preheat oven to 375°F, brush empanadas with egg wash, and bake for 20-25 minutes until crispy. For frying, heat oil in a deep pot and fry until golden brown, about 3-4 minutes per side.
Notes
These empanadas are perfect on their own but can be served with barbecue sauce, ranch dressing, or spicy aioli. Consider pairing with a side salad or veggie platter.
