  • 4 large russet potatoes, halved lengthwise
  • 1 pound ground beef (lean)
  • 1/2 cup cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced onion
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoon melted butter
  • Chopped green onions, for garnish
  • Sour cream, for serving

Instructions

1. Preheat your oven to 400°F. Brush the cut-side of the potato halves with melted butter. Arrange the potato halves on a baking sheet, cut-side up. Bake for about 30-35 minutes until tender. Allow to cool slightly and scoop out the centers, leaving a thin shell.

2. Heat a skillet over medium heat and brown the ground beef with diced onion. Add garlic powder, onion powder, salt, and pepper. Drain excess fat and stir in Worcestershire sauce.

3. In a large bowl, combine the cooked beef mixture with crumbled bacon and half of the shredded cheddar cheese. Mix well.

4. Fill each potato shell with the beef and bacon mixture, then top with remaining cheddar cheese. Return to the oven for an additional 10-12 minutes until cheese is melted and bubbly. Optionally broil for a minute or two for a golden top.

5. Serve with chopped green onions and sour cream.
