Ingredients
- 1 pound boneless, skinless chicken breasts, diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 2 tablespoon olive oil
- 1 tablespoon fajita seasoning
- 8 ounce cream cheese, softened
- 1 cup shredded cheddar cheese
- 12 slider buns
- Fresh cilantro, for garnish
Instructions
1. Heat 2 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken and sauté until browned, about 5-7 minutes.
2. Stir in the sliced red and green bell peppers and onion. Sprinkle 1 tablespoon of fajita seasoning over the top and cook until the veggies are tender, roughly 5 minutes.
3. Reduce heat to low, add the softened cream cheese, and stir until melted and combined. Mix in 1 cup of shredded cheddar cheese until well incorporated.
4. Slice slider buns in half horizontally. Place portions of the cheesy chicken mixture onto the bottom half of each bun and top with the other half.
5. Arrange sliders on a platter and garnish with fresh cilantro. Serve warm.
