Easy 30-Minute Cheesy Chicken Fajita Stromboli is a quick and cheesy meal that combines tender, seasoned chicken, colorful bell peppers, and gooey cheese, all wrapped in a golden crust.
Ingredients
- 1 pound cooked chicken breast, shredded
- 1 cup bell peppers, sliced (any color)
- 1 small onion, sliced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded Mexican cheese blend
- 1 package refrigerated pizza dough
- 1 egg, beaten (for egg wash)
Instructions
1. Preheat your oven to 400°F.
2. In a skillet, heat a splash of oil over medium heat. Sauté the sliced bell peppers and onion until softened, about 5 minutes.
3. Stir in the shredded chicken along with chili powder, cumin, garlic powder, salt, and pepper. Cook for another 2-3 minutes.
4. Roll out your pizza dough into a rectangular shape on a floured surface.
5. Spread the chicken mixture evenly over the dough, then sprinkle the shredded cheese on top.
6. Starting from one long side, carefully roll the dough over the filling and pinch the edges to seal.
7. Place the stromboli on a lined baking sheet and brush the top with the beaten egg. Bake for 20-25 minutes until golden brown.
8. Let cool for a couple of minutes before slicing and serve warm.
Notes
Consider serving with salsa or sour cream.
