Ingredients
- 1 pound boneless skinless chicken breasts, diced
- 2 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 1 small zucchini, diced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 cup uncooked orzo pasta
- 2 cup chicken broth
- 1/4 cup balsamic vinegar
- 2 tablespoon honey
- 1/2 cup grated Parmesan cheese
- Fresh basil, chopped
Instructions
1. Toss the diced chicken in a small bowl with garlic powder, Italian seasoning, salt, and black pepper.
2. Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
3. In the same skillet, add zucchini, bell pepper, cherry tomatoes, and minced garlic. Sauté for 4-5 minutes until tender.
4. Stir in uncooked orzo pasta and chicken broth. Bring to a gentle boil.
5. Reduce heat and let it simmer for 10-12 minutes until orzo is tender and liquid is mostly absorbed.
6. Stir in balsamic vinegar and honey until well-combined.
7. Return the cooked chicken to the skillet, sprinkle with Parmesan cheese, and stir until heated through.
8. Garnish with freshly chopped basil before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of chicken broth to restore moisture.
