Instructions

1. To caramelize the onions, start by melting the butter with olive oil in a large oven-safe skillet or Dutch oven over medium-low heat. Add the sliced onions and cook them slowly, stirring occasionally, for 25 to 30 minutes. The key is to let the onions cook low and slow, allowing them to gradually release their natural sugars and develop that beautiful golden-brown color. Be patient and resist the urge to crank up the heat, as this can cause the onions to burn rather than caramelize.

2. Once the onions have reached a rich, caramelized state, add the minced garlic and fresh thyme (or dried thyme) and cook for one more minute, allowing the flavors to meld together.

3. While the onions are caramelizing, season and sear the chicken. Season the chicken generously with salt and pepper on both sides. In the same pan with the caramelized onions, create some space and sear the chicken over medium-high heat for 3 to 4 minutes per side until golden brown. This pre-searing helps to lock in the juices and ensures the chicken remains tender and flavorful throughout the baking process. Once seared, remove the chicken from the pan and set it aside.

4. Now that the onions are caramelized and the chicken is seared, add the orzo and broth to the pan. Stir the uncooked orzo into the caramelized onions, then pour in the chicken broth and beef broth. Bring the mixture to a gentle simmer, then nestle the seared chicken back into the pan, nestling it into the orzo.

5. Cover the pan and transfer it to a preheated 375°F oven. Bake for 20 to 25 minutes, or until the orzo is tender and the chicken is cooked through. Once baked, remove it from the oven and shred the chicken directly in the pan, stirring it into the orzo and onions.

6. Spread the shredded cheeses evenly over the top of the casserole, then place it under the broiler for 3 to 5 minutes, until the cheese is melted and golden brown. Keep a close eye on it to prevent burning.

7. Let it rest for 5 minutes before serving. Serve directly from the baking dish, garnished with fresh thyme or parsley.
