  • 1 cup finely grated zucchini, squeezed dry
  • 1 cup semisweet chocolate chips
  • 1/2 cup chopped walnuts

Instructions

1. Preheat your oven to 350°F. Prepare an 8 x 8-inch baking pan by lining it with parchment paper.

2. Grab your zucchini, wash it thoroughly, and finely grate it. Then, wrap the grated zucchini in a clean kitchen towel and squeeze firmly to remove any excess moisture.

3. In a large mixing bowl, whisk together the melted butter and brown sugar until smooth. Add the eggs, one at a time, followed by the vanilla extract, stirring well.

4. In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.

5. Gradually fold the dry ingredients into the wet mixture using a spatula, being careful not to overmix.

6. Gently fold in the squeezed zucchini, chocolate chips, and chopped walnuts until evenly distributed.

7. Pour the brownie batter into the prepared baking pan, spreading it evenly. Bake for 20-25 minutes. The brownies are done when a toothpick inserted into the center comes out with a few moist crumbs.
