Description
Garlicky Sweet Thai Chili Chicken and Green Beans Stir Fry is a quick and delicious weeknight dinner that combines tender chicken with crisp vegetables in a sweet and spicy sauce.
Ingredients
- 1 pound boneless skinless chicken thighs or chicken breast, diced
- 1 tablespoon vegetable oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoon cornstarch
- 2 bell peppers, sliced
- 1 cup green beans, trimmed
- 1/2 tablespoon garlic cloves, minced
- 1/4 teaspoon ginger, optional
- 1 teaspoon crushed red pepper
- 1/8 teaspoon sesame oil
- 1 1/4 cup sweet Thai chili sauce
Instructions
1. Dice the chicken into bite-sized pieces.
2. Slice bell peppers into strips and trim green beans.
3. In a bowl, combine chicken with vegetable oil, garlic powder, salt, black pepper, and cornstarch.
4. Heat a skillet over medium-high heat and cook chicken in batches until golden brown.
5. In the same skillet, add bell peppers and cook until tender.
6. Add minced garlic and optional ginger, cooking for 30 seconds.
7. Return chicken to the skillet, add green beans, sweet Thai chili sauce, sesame oil, and crushed red pepper.
8. Stir everything together and heat through for a couple of minutes.
Notes
Serve over steamed jasmine rice or cauliflower rice. Garnish with sesame seeds, green onions, or cilantro.
