Description
Glazed Honey Lime Chicken with Avocado and Rice Stack Dinner Bowl is a vibrant and nourishing dish that combines the irresistible tang of citrus, the sweetness of honey, and the creamy richness of avocado, all atop a bed of fragrant cilantro-lime rice.
Ingredients
- 1 1/2 pound boneless, skinless chicken breasts or thighs
- 3 tablespoon honey
- Juice and zest of 2 limes
- 2 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder (optional)
- Salt and black pepper, to taste
- 1 cup jasmine or basmati rice
- 2 cup water or chicken broth
- 1 tablespoon lime juice
- 1 tablespoon fresh cilantro, chopped
- Pinch of salt
- 2 ripe avocados, diced or mashed
- 1 tablespoon lime juice
- Salt and black pepper, to taste
Instructions
1. In a bowl or zip-top bag, whisk together the honey, lime juice and zest, olive oil, garlic, cumin, paprika, chili powder (if using), salt, and pepper. Add the chicken and toss to coat it evenly. Cover and refrigerate for at least 30 minutes, or up to overnight.
2. In a saucepan, combine the rice with either water or chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until tender. Fluff with a fork and stir in lime juice, cilantro, and a pinch of salt.
3. Heat a skillet or grill pan over medium-high heat. Remove chicken from marinade and cook for 5-7 minutes per side until golden brown and cooked through. Allow to rest for 5 minutes before slicing.
4. Toss diced or mashed avocado with lime juice and a pinch of salt.
5. To assemble, layer cilantro lime rice on the bottom, followed by avocado layer, and then sliced chicken on top.
Notes
Drizzle reserved honey-lime marinade over the top for extra flavor. Offer lime wedges on the side for guests to adjust citrus notes. Optional toppings include diced cherry tomatoes, red onion, feta or cotija cheese, fresh cilantro, tortilla strips, sour cream, or avocado dressing.
