Ingredients
- 1 1/2 to 2 pound boneless, skinless chicken thighs
- 3 tablespoon soy sauce
- 1 tablespoon gochujang
- 1 tablespoon brown sugar or honey
- 1 tablespoon rice wine or mirin
- 1 tablespoon sesame oil
- 1 tablespoon minced garlic
- 1 teaspoon grated fresh ginger
- 1/4 teaspoon black pepper
- 1/2 small onion, grated or finely chopped
- 1 teaspoon gochugaru (Korean red pepper flakes), optional
- 1 tablespoon neutral oil, for cooking
- Sesame seeds and sliced green onions, for garnish
Instructions
1. To create the marinade for Homemade Chicken Bulgogi, simply combine the soy sauce, gochujang, brown sugar or honey, rice wine or mirin, sesame oil, garlic, ginger, black pepper, grated onion, and gochugaru (if using) in a large bowl. Whisk the ingredients together until well incorporated.
2. Once the marinade is prepared, add the chicken thighs and toss them to ensure they are evenly coated. Cover the bowl and let the chicken marinate for at least 30 minutes, or up to 24 hours in the refrigerator for even deeper flavor development.
3. Heat a tablespoon of neutral oil in a large skillet or grill pan over medium-high heat. Add the marinated chicken and cook for about 4 to 6 minutes per side, or until the chicken is caramelized and cooked through. Alternatively, grill the marinated chicken over medium-high heat for 4 to 6 minutes per side. You can also bake the marinated chicken in a preheated 400°F oven for 20 to 25 minutes, flipping halfway through, until the chicken is cooked through and lightly browned.
4. Regardless of the cooking method you choose, be sure to let the chicken rest briefly before slicing it into bite-sized pieces.
Notes
The versatility of Homemade Chicken Bulgogi makes it a great choice for a variety of serving options. Traditionally, it’s served over steamed white rice. For a fresh and crunchy contrast, serve the chicken in lettuce wraps with sliced cucumbers, carrots, and a drizzle of soy sauce or gochujang. Garnish with toasted sesame seeds and sliced green onions.
