Ingredients
- 8 pieces bone-in, skin-on chicken thighs
- 16 ounce baby red potatoes, halved
- 16 ounce baby carrots
- 16 ounce green beans, trimmed
- 2 tablespoon chopped fresh parsley leaves
- 1/2 cup reduced sodium soy sauce
- 1/2 cup honey
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon ground black pepper
Instructions
1. Prepare your slow cooker by layering the bottom with halved baby red potatoes and baby carrots. Nestle the chicken thighs on top of the vegetables. Stir the sauce ingredients together and pour over the chicken and veggies. Cover and set to low heat for 7-8 hours or high for 3-4 hours, basting every hour. Add green beans during the last 30 minutes of cooking.
2. For a crispy finish, preheat your oven to broil after slow cooking. Transfer chicken thighs to a baking sheet skin side up and broil for 3-4 minutes until golden.
Notes
Serve with fluffy rice or a fresh salad. Garnish with freshly chopped parsley. Adjust sweetness or spiciness of the sauce to taste.
