Ingredients
- 1/4 cup low-sodium soy sauce
- 1/4 cup honey
- 2 tablespoon rice vinegar
- 1 teaspoon toasted sesame oil
- 1 tablespoon fresh ginger, grated
- 4 cloves garlic, minced
- 1 1/2 pound pork tenderloin, cut into bite-size pieces
- 1/3 cup cornstarch
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoon oil
- 1 red bell pepper, thinly sliced
- 1 cup snap peas
- 1 tablespoon sesame seeds
Instructions
1. 1. Whisk together the soy sauce, honey, rice vinegar, and sesame oil in a small bowl. Add the ginger, garlic, and sambal oelek or red pepper flakes. Set aside.
2. 2. Toss the pork tenderloin pieces with cornstarch, salt, and black pepper in a mixing bowl until evenly coated.
3. 3. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the red bell peppers and snap peas, cooking for 4 to 5 minutes until blistered. Remove from the skillet and set aside.
4. 4. Add the remaining tablespoon of oil to the skillet. Cook the pork in a single layer for about 3 to 4 minutes per side until golden brown and cooked through.
5. 5. Return the vegetables to the skillet and pour in the prepared sauce. Stir together and cook for an additional 2 to 3 minutes until the sauce thickens.
Notes
Garnish with sesame seeds and serve over rice or noodles. Store leftovers in an airtight container in the refrigerator for up to 3 days.
