Ingredients
- 1 pound salmon, skin removed and cut into cubes
- 2 tablespoon honey
- 2 tablespoon sriracha
- 2 tablespoon low-sodium soy sauce
- 1 teaspoon sesame oil
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon olive oil
- 1 teaspoon sesame seeds
- 1/4 cup mayonnaise or Greek yogurt
- 1 tablespoon sriracha
- 1 teaspoon honey
- 1 teaspoon lime juice
- 2 cup cooked white or jasmine rice
- 1 cup shelled edamame, cooked
- 1 large avocado, sliced
- 2 green onions, sliced
- Fresh cilantro or parsley
- Red pepper flakes, optional
- Extra sesame seeds, for garnish
Instructions
1. 1. Create the Marinade: In a mixing bowl, whisk together the honey, sriracha, soy sauce, sesame oil, minced garlic, and grated ginger.
2. 2. Marinate the Salmon: Add the cubed salmon to the marinade, gently tossing to ensure it’s evenly coated. Let it sit for about 10-15 minutes.
3. 3. Cook the Salmon: Heat the olive oil in a large skillet over medium-high heat. Add the marinated salmon cubes in a single layer. Cook for 2–3 minutes per side until caramelized and cooked through.
4. 4. Prepare the Spicy Creamy Sauce: In a small bowl, mix together mayonnaise or Greek yogurt, sriracha, honey, and lime juice until smooth.
5. 5. Assemble the Bowls: Divide the warm cooked rice between serving bowls. Top each with honey-sriracha salmon, cooked edamame, and avocado slices. Drizzle with the spicy creamy sauce.
6. 6. Garnish and Serve: Finish with sesame seeds, sliced green onions, fresh cilantro or parsley, and optional red pepper flakes.
