Ingredients
- 2 pound boneless, skinless chicken breasts
- 16 ounce cremini mushrooms, sliced
- 5 garlic cloves, minced
- 1/2 cup heavy whipping cream
- 4 ounce full-fat cream cheese, softened
- 1/2 cup chicken bone broth
- 2 tablespoon unsalted butter
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon onion powder
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon sea salt
- 1/2 teaspoon ground black pepper
Instructions
1. Preheat your oven to 375°F and grease a 9 × 13-inch baking dish.
2. Heat the olive oil in a large skillet over medium-high heat.
3. Season the chicken with sea salt, black pepper, and onion powder. Sear for about 5–7 minutes until browned, then transfer it to the prepared baking dish.
4. Melt the butter in the same skillet. Add the sliced mushrooms and sauté for 6–8 minutes until their moisture evaporates and they become golden brown at the edges.
5. Add minced garlic and thyme to the skillet. Cook for 1 minute until fragrant.
6. Reduce the heat to medium. Pour in the chicken bone broth and add the softened cream cheese. Whisk constantly until the cream cheese is fully melted and the sauce is smooth.
7. Stir in the heavy cream and let it simmer for 2–3 minutes until the sauce thickens slightly.
8. Pour the mushroom cream sauce over the chicken in the baking dish, tossing gently to ensure everything is evenly coated.
9. Sprinkle the grated Parmesan and shredded mozzarella evenly over the top of the casserole.
10. Bake in the preheated oven for 20–25 minutes until the cheese is golden and the sauce bubbles enticingly.
11. Allow the casserole to rest for 5 minutes before serving to let the flavors meld and the sauce to set slightly.
Notes
